Pecan Pie Muffins

I really need to post more often. Tonight, what should have taken a few minutes to write and upload took foooorrrreeeevvvveerrrr because I forgot my Flickr account information.

Have you ever tried to hack into your own account? It's a bugger, I tell you. But I was determined. And after what seemed like fooooorrrrreeeevvvveerrr, I cracked the Flickr fortress and uploaded my pics so I could share with you this most delicious recipe.

And now that it's 11:45 pm, who doesn't want a muffin?

Here's what you need:

Some Baker's Joy (I love, love, love this stuff...but you can use Pam or Crisco or butter or whatever you like to keep muffins from sticking), butter, brown sugar, some flour, a couple of eggs, and some pecans. Oh - and two really cute kids who think they know how to make muffins better than Mom. Maybe I should have asked them what my Flickr password was?

In a medium bowl, stir together one cup of packed brown sugar, half a cup of flour and a cup of pecans.

Then, whisk together the eggs and the butter. I like to use my stand mixer because I'm lazy. The girls love this part because I let them turn the mixer on. After that, I put the fear of God and severed fingers in them to keep their hands out of the mixer.

After the butter and the eggs are blended together, pour in the dry ingredients and mix it all together. No fingers in the mixer please.

Lightly spray a muffin pan with Baker's Joy or whatever you decided to use. I'll show you in a minute why I am a tried and true fan of Baker's Joy. Spoon batter into the muffin pan, about two-thirds the way full.

Bake in a 350 degree oven for about 25 minutes.

And this is why I love Baker's Joy. It's baking bliss. Nothing sticks to the pan.

This, however, is heavenly. A little butter on the top...

Pecan Pie Muffins
1 cup chopped pecans
1 cup packed brown sugar
1/2 cup flour
2/3 cup butter
2 eggs

Preheat oven to 350. In a bowl, stir together dry ingredients and set aside. In a stand mixer, beat together butter and eggs. Add in dry ingredients and blend well. Spoon into a greased muffin pan and bake for 25 minutes. Cool on wire rack and top with butter. Makes about a dozen muffins.
